Date Balls

From the Kitchen of Kathy Lingle of Metropolis, IL

INGREDIENTS

  • 8 Oz. Dates

  • 2 Eggs

  • 1 Stick Butter

  • 1 Cup White Sugar

  • 3 Cups Rice Krispies

  • 1 Cup Nuts, Chopped

  • Coconut, Shredded

INSTRUCTIONS

In a sauce pan, combine dates, eggs, butter, and sugar. Bring mixture to a boil for 5 minutes. Remove from heat and stir mixture into a bowl containing rice krispies and chopped nuts. Let the mixture cool. Roll the mixture into balls, buttering hands if necessary. Pour shredded coconut into a bowl. Roll each date ball in the coconut to coat the outside.
