Tequila Grilled or Seared Fish

INGREDIENTS

  • 4 to 6 Fish Fillets or Choice

  • Salt

  • Pepper

  • 1/2 Cup of Tequila

  • 1/2 Cup of Orange Juice

  • 1 Small Red Bell Pepper, Sliced

  • Fresh Parsley, Diced

  • 1/2 Cup of Onion, Diced

IF SEARING

  • Butter

  • Olive Oil

INSTRUCTIONS

Combine tequila and orange juice in a large bowl or dish, and marinate your favorite fish fillets in the mixture for at least 2 hours. Marinate fish over night for better results. Remove fillets from marinade carefully and cook over a hot grill, turning as few times as possible. Grill fish with sliced red bell peppers, and sprinkle tops with diced fresh parsley and onions. Apply a dash of salt and pepper as fillets cook. Serve hot.
