Apricot Chicken

INGREDIENTS

  • 3 Lbs.  Chicken Breast

  • 1 Package Dry Onion Soup Mix

  • 4 Oz. Russian Dressing

  • 4 Oz. Apricot Jam or Preserves

INSTRUCTIONS

  Place chicken pieces in a shallow baking pan. Mix together the other ingredients and pour them over the chicken pieces. Bake with the pan covered with aluminium foil at 300ºF for 1 hour. Then bake another 30 minutes uncovered. Sauce may be thinned with sherry. Serves 4-6.
Note: I usually double the dressing and preserves amounts and leave everything else the same.
