Pumpkin Whoopie Pies

  • 1 Egg

  • 2 Cups Brown Sugar

  • 1 Cup Oil

  • 1 Tsp. Cloves

  • 1 Tsp. Cinnamon

  • 1 Tsp. Ginger

  • 1 Tsp. Salt

  • 1 Tsp. Baking Soda

  • 1 Tsp. Baking Powder

  • 1 Tsp. Vanilla Extract

  • 2 Cups Pumpkin, Cooked & Mashed

  • 3 Cups Flour


  • 2 Tsp. Vanilla Extract

  • 4 Tbsp. Flour

  • 1 Cup Margarine

  • 8 Oz. Cream Cheese

  • 3-4 Cups Powdered Sugar

  • 2 Tbsp. Milk


Preheat oven to 350ºF. In a mixing bowl, cream together the egg and sugar. Add the oil, spices, salt, baking soda, and baking powdered to the bowl and stir to combine. Add the rest of the ingredients and beat well. Drop the batter on to a cookie sheet by tablespoon and placing them 2 inches apart. Bake for 12 minutes or until done. Let cool before adding the filling. In a clean bowl, beat together all the filling ingredients together until well combined. Spread some of the filling on to the bottom of one cookie and sandwich it with a second cookie. You may wish to wrap the pies in plastic wrap to hold the moisture in. The pies make an easy, yummy snack.
