Holiday Pudding Delight

From the Kitchen of Mayra Diaz Ballard of Mayfield, KY


Layer 1

  • 1/4 Cup Butter, Melted

  • 1 Cup Flour

  • 1/2 Cup Pecans, Chopped

  • 1 Tbsp. Sugar (Optional)

  • 1 Cup of Mandarin Oranges

Layer 2

  • 8 Oz. Cream Cheese, Softened

  • 1 Cup Powdered Sugar

  • 2 Cups Cool Whip

Layer 3

  • 2 Boxes (3 3/4 Oz.) Instant Pudding (Pistachio Nut or preferred flavor)

  • 3 Cups Milk, Cold

Layer 4

  • Cool Whip

  • Pecans, Chopped

  • Shredded Coconut

  • Maraschino Cherries


Layer 1: Preheat oven to 350ºF. Combine all ingredients and press into bottom of sheet cake pan. Bake for 15 minutes. Set crust aside to cool.
Layer 2: Mix all ingredients until smooth. Spread evenly over first layer.
Layer 3: Mix all ingredients until smooth. Spread evenly over second layer.
Layer 4: Use enough cool whip to spread evenly over top of third layer. Sprinkle pecans and coconut over top of cool and whip. Drain maraschino cherries and add to top of cool whip. Refrigerate dish until ready to eat.
