Prune Cake

  • 3 Eggs

  • 1 Tsp. Baking Soda

  • 1 Tsp. Vanilla

  • 1 Cup Oil

  • 1 Tsp. Salt

  • 1 Cup Prunes, Cooked

  • 1½ Cups Sugar

  • 1 Tsp. Cinnamon

  • 2 Cups Flour

  • 1 Tsp. Ground Nutmeg

  • 1 Cup Nuts, Chopped

  • 1 Cup Buttermilk

  • 1 Tsp. All Spice

  • 1 Cup Sugar

  • ½ Cup Buttermilk

  • ½ Tsp. Baking Soda

  • 1 Tbsp. White Karo Syrup

  • ¼ to ½ Cup Butter

  • ½ Tsp. Vanilla


Cake: Preheat oven to 300ºF. In a bowl, blend together the sugar and oil. Add the eggs to the mixture one at a time and beat well after each. In another bowl, combine the dry ingredients. Add milk and the dry ingredients alternately to the egg mixture. Add vanilla, prunes, and nuts to the batter.

Grease and flour the sides of a cake pan. Bake for an hour or until a toothpick poked in the center comes out clean.

 Icing: Combine all ingredients, except for the vanilla, in a sauce pan. Cook until icing reaches the softball stage or reaches around 235ºF on a candy thermometer. Add the vanilla to the icing and pour over cake while hot.
