Sweet Potato Logs

From the Kitchen of Joyce Cisco of Union City, TN

INGREDIENTS

  • 4 Medium Sweet Potatoes, Cooked & Mashed

  • 1 Tsp. Vanilla Extract

  • 1 Cup Sugar

  • 1 Egg, Beaten

  • ¼ Cup Milk

  • 3 Tbsp. All Purpose Flour

  • 1 Tsp. Cinnamon

  • ½ Cup Pecans, Chopped

  • ½ Cup Raisins

  • 1 Cup Shredded Coconut

  • ½ Cup Butter, Melted

INSTRUCTIONS

In a large bowl, combine the rst 8 ingredients and mix well. Dredge the the raisins in our and add them to the mixture. Place mixture in the refrigerator to chill. Shape mixture into 8 logs and roll them in coconut. Place logs on a greased baking sheet and drizzle melted butter over tops. Preheat oven to 375ºF and bake for 20 minutes or until the logs are browned and crispy.
